Carver County CDA Open to Business Program Helps Launch Ruby’s Roost in Downtown Mayer

With financing and technical assistance from the Carver County CDA’s Open to Business Program, Ruby’s Roost opened in downtown Mayer in the spring of 2015.

Bob and Linnea Boyd began the process with asking Mayer City Administrator Luayn Murphy how to go about finding a location and planning for her new organic coffee shop/bakery business concept. Murphy referred the Boyds to the Carver County CDA and it’s Open to Business Program Director Lee Hall. Lee and the Boyds worked tirelessly together on developing a business plan, financing plan, and location analysis and buildout plan until they were awarded financing from the Open to Business Program.

“Ruby’s Roost is a success because of the passion and the hard work of Bob and Linnea,” said Lee, “It was their vision, and they did the heavy lifting to make it happen. I’m thrilled that Open to Business could help in some small way bringing their dream to reality.”

Ruby’s Roost is not your typical coffee and bakery shop. What sets it apart is the focus on local and organic products, a trend they had already incorporated into their own lives after they started having children. There is organic coffee and as well as organic bakery goods of many types available at their store. Linnea Boyd states, “On a Saturday morning, it’s not uncommon to have a line out the front door with people waiting for her famous caramel rolls. We sometimes sell out completely by 10:00 am or so.” The store has been extremely successful to date, with sales exceeding expectations. There are numerous families and foodies/coffee aficionados who have fallen in love with Ruby’s Roost already and they have a loyal following in its early stage.

Ruby’s Roost opened on May 1, 2015 and is located at 255 Ash Avenue North, right off Hwy 25 in downtown Mayer.
